They make use of Japanese spirits—whisky, gin, sake, shōchū—and house-made infusions to deliver cocktails that feel bespoke and thoughtful. Highlights include the “floating technique” for whisky—where water is gently layered so the single-malt remains undiluted, letting you savour its full character.
