Proof Cocktail Bar is the kind of place you hear about from someone who loves great cocktails and then spend a few minutes happily hunting for. Tucked just off Plac Solny in Wrocław’s Old Town, it embraces the speakeasy spirit from the very first moment: the entrance is discreet, the descent is atmospheric, and the reveal is a warmly lit room that feels made for conversation. Inside, the bar glows against dark timber and stone, with a handful of low tables and stools arranged so you can watch the team work or tuck into a quiet corner. Music is kept at a level that still lets you talk, and the lighting is tailored to the theatre of the glass—enough to admire the drink, soft enough that the space stays intimate. The menu is a love letter to travel and technique. Their signature series, “Around the World in 12 Cocktails,” takes familiar spirits into unexpected territory without losing balance. You might start locally with Wrocław Genever and Schöps layered with plums, honey and a lick of Kłodawa salt for a bright, refreshing opener. From there, the world tour gets playful: Greece blends Metaxa and mastiha with rose and cucumber for a sun‑kissed, delicate sip; India pairs Hendrick’s with mango, coriander, chili and ginger for something dry, fragrant and lightly spicy; and Thailand leans into Żubrówka Czarna with tom yum accents, lime and coconut—surprisingly clean and evocative of its namesake. Japan reads elegant, with Glenfiddich 12 meeting kukicha, shiso, yuzu and a wisp of nori. There’s even a stop in Australia built on lime, lemon and eucalyptus soda for a crisp reset. Mexico brings Ojo de Tigre, agave and mole together for a boozy, bittersweet profile; Miami swings citrusy and a little decadent with rum, patchouli and fruit wine; Ghana folds whiskey into coffee, chocolate and rooibos; Scotland plays with Monkey Shoulder, peat, heather honey and a daring brush of smoked salmon; and Italy is a beautiful, bitter charmer that weaves Campari, gin, vermouth and white truffle with a ribbon of stracciatella. If you prefer classics, there’s a dedicated section that treats them with care—Negroni, French 75 and Eastside among them—plus a set of Hendrick’s‑forward serves for a clean, garden‑fresh line of gin drinks. The “BulletProof vol. 2” list is where the team flexes: M&M Mule marries Montenegro and mezcal with chipotle heat over gingery fizz; Ube Highball nods to contemporary dessert flavors with Irish whiskey, ube and pandan; Cobra’s Fang tips its hat to tiki tradition; and Penicillin arrives smoky, gingery and comfortingly familiar. House twists are intelligent rather than showy: a Dirty Martini accented with tomato dashi for umami depth; an Oaxaca Old‑Fashioned pulled caramel‑rich with agave and black cardamom; a Toronto sharpened by maple and Fernet; a Brandy Alexander reimagined with miso; even a Cynar Flip that’s lush yet balanced. Snacks are deliberately simple and shareable—cheese and charcuterie boards with fig jam and nuts, cicchetti on toasted bread (think pesto with tomatoes, tapenade with citrus zest, or a gentle nudge of ’nduja), and a small tartare served on bread so you can keep your seat and your conversation without breaking the rhythm of the evening. Service is a strong suit: bartenders engage, ask a few smart questions, and will happily steer you to something off‑menu if you describe what you’re in the mood for. It never feels precious or stiff; there’s a touch of theatre, a lot of craft, and an evident pride in hospitality. Expect a mixed crowd—date nights, small groups, solo drinkers at the rail—all drawn by the promise of a quiet, well‑made drink rather than a late‑night roar. Seating is limited and the room is intimate, so early evening reservations are sensible; later on, patient walk‑ins usually find their place. Prices sit in the fair‑for‑quality bracket, and pours are precise, glassware handsome, and ice crystal‑clear. Above all, Proof is worth the hunt because it rewards curiosity: the door is hard to spot by design, but what waits below is one of Wrocław’s most confident, quietly exciting cocktail bars.
