Nestled in Seattle's Capitol Hill, Canon is a celebrated cocktail bar known for its extensive spirit collection and innovative mixology. With over 4,000 labels, it's recognized as having the largest spirit collection in the Western Hemisphere. ​ Opened in 2011 by Jamie Boudreau, Canon has garnered numerous accolades, including ranking #6 in the World's 50 Best Bars in 2014. The bar's ambiance is characterized by antique furnishings, dim lighting, and walls lined with bottles, creating an intimate and sophisticated atmosphere.​ Canon's menu features a range of creative cocktails, from classics to unique concoctions served in whimsical vessels. Notable offerings include the "Gnome Chomsky," presented in a copper gnome, and the "Warhol," served in a Campbell’s soup can.
